Apple-Ginger Mule

Prep: 5 minutes • Serves: 2

6 (1/8-inch-thick) slices Granny Smith apple plus additional for garnish
1-1/2 fluid ounces (3 tablespoons) simple syrup
1 teaspoon chopped fresh ginger
3 fluid ounces (1/4 cup plus 2 tablespoons) apple-flavored vodka
3 fluid ounces (1/4 cup plus 2 tablespoons) Honey Crisp-style 100% apple juice
1 fluid ounce (2 tablespoons) key lime juice
Ice
3 fluid ounces (1/4 cup plus 2 tablespoons) club soda

1.In cocktail shaker, muddle apple, simple syrup and ginger with muddler or large wooden spoon handle; add vodka, apple juice and key lime juice. Fill shaker halfway with ice cubes; cover and shake vigorously.

2.Fill 2 (16-ounce) copper mugs with ice. Strain vodka mixture over ice; top with club soda and garnish with apple slices.
