Arugula Salad with Citrus Vinaigrette
Prep: 15 minutes • Serves: 8
2 tablespoons fresh orange juice
1-1/2tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon lemon zest
1 teaspoon orange zest
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup extra virgin olive oil
2 packages (5 ounces each) baby arugula
1 cup crumbled feta cheese
1/2 cup pomegranate arils
Orange wedges for garnish (optional)
1. In medium bowl, whisk juices, vinegar, mustard, zests, salt and pepper; whisking constantly, slowly drizzle in oil until emulsified. Makes about 1 cup.
2. In large serving bowl, toss arugula and vinaigrette; sprinkle with cheese and pomegranate arils. Makes about 6 cups.
3. Serve salad garnished with orange wedges, if desired.
