Bacon-Ranch Buffalo Potato Salad

Prep: 15 minutes plus cooling
Cook: 15 minutes • Serves: 6

1-1/2 pounds red potatoes (about 10 potatoes), cut into ¾-inch pieces
6 slices thick-cut bacon, chopped
1 packet (1 ounce) ranch seasoning mix
1/3 cup mayonnaise
1/4 cup cayenne pepper hot sauce
1/3 cup chopped celery
1/4 cup chopped red onion
Chopped fresh chives for garnish (optional)

1. In large covered saucepot, heat potatoes and enough water to cover by 1 inch to a boil over high heat; reduce heat to medium and simmer, uncovered, 10 minutes or until potatoes are easily pierced with a knife. Drain potatoes; cool completely.

2.In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate.

3.In large bowl, whisk seasoning, mayonnaise and hot sauce; fold in celery, onion, potatoes and bacon. Serve garnished with chives, if desired. Makes about 4-1/2 cups.
