BLT Chicken Salad Cups

Cook: 5 minutes • Serves: 4
1 large avocado, peeled and pitted
1/3 cup plain nonfat Greek yogurt
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1/4 teaspoon ground black pepper
8 large romaine lettuce leaves
2 1/3cups chopped skinless rotisserie chicken breast meat
1/2 cup halved cherry tomatoes
2 green onions, thinly sliced
1.In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.
2.In medium bowl, mash avocado, yogurt, lemon juice, salt and pepper with fork. Makes about 1 1/3 cups.
3.Spread avocado mixture onto lettuce leaves; top with chicken, tomatoes, onions and bacon.
