Brown Butter Chocolate Chip, Dried Cherry & Walnut Cookies
Prep: 25 minutes plus cooling and chilling
Bake: 12 minutes per batch • Makes: about 34 cookies
1-1/2 cups Domino® Granulated Sugar
2 teaspoons molasses
3-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon ground nutmeg
1/2 cup butter-flavored shortening
2 large Eggland’s Best Eggs
1 tablespoon plus 1 teaspoon vanilla extract
1 cup dried cherries
1 cup Nestlé® Semi-Sweet Chocolate Chips
1 cup chopped walnuts, toasted
1. In small saucepan, cook butter over medium-low heat 8 minutes or until golden-amber colored, stirring frequently; cool at room temperature 1 hour.
2.In small bowl, stir 1 cup sugar and molasses. In medium bowl, stir flour, baking soda, cinnamon, salt and nutmeg.
3.In large bowl, cream shortening, brown butter, sugar mixture and remaining 1/2 cup sugar with mixer on medium speed. Add eggs and vanilla extract; beat until incorporated. Reduce speed to low; gradually add flour mixture and beat until incorporated. Fold in cherries, chocolate chips and walnuts.
4.Line cookie sheets with parchment paper. Using 2 small spoons, drop 2 heaping tablespoons cookie mixture 2-inches apart on prepared cookie sheets. Refrigerate 1 hour.
5.Preheat oven to 375°. Bake cookies 12 minutes or until bottoms are golden brown; cool on pan 3 minutes then transfer to wire rack.
