Buttermilk Biscuit Burgers

Prep: 15 minutes plus standing
Bake/Cook: 12 minutes • Serves: 4

Nonstick cooking spray
1 package (7.75 ounces) buttermilk biscuit mix
1/2 cup shredded Tillamook® Cheddar Cheese
1 tablespoon finely chopped fresh chives
4 (1/2-pound) burger patties
1/4 cup Ken’s® Thousand Island Dressing
4 (1/4-inch-thick) slices beefsteak tomato
1 cup arugula

1. Preheat oven to 450°; spray rimmed baking pan with cooking spray. In large bowl, stir biscuit mix, cheese, chives and 1/2 cup water. Drop by 1/3-cupfuls onto prepared pan; gently shape into 3-1/2 x 3/4-inch rounds. Bake biscuits 12 minutes or until golden brown; let stand 5 minutes. Makes 4 biscuits.

2. Cook burgers until internal temperature reaches 145°.

3. Cut biscuits in half horizontally. Place burgers on bottom halves of biscuits; top with dressing, tomato, arugula and top halves of biscuits. Makes 4 burgers.
