Cherry Tomato Jam

1tablespoon Colavita® Olive Oil
2shallots, chopped
1garlic clove, minced
2pounds cherry tomatoes (about 3 pints)
3/4cup Domino Granulated Sugar
1/2cup water
1/4cup apple cider vinegar
1/4cup fresh lemon juice
1teaspoon chopped fresh thyme
1teaspoon salt
1/4teaspoon ground black pepper

1. In large saucepot, heat oil over medium-high heat. Add shallots; cook 2 minutes, stirring occasionally. Add garlic; cook 1 minute, stirring occasionally.
2. Add tomatoes, sugar, water, vinegar, lemon juice, thyme, salt and pepper; heat to a boil. Reduce heat to low; cook 2-1/2 hours or until mixture thickens to jam consistency. Remove from heat and cool. Makes about 3 cups.
