Cilantro-Lime Rice with Cotija Cheese

2 garlic cloves, minced
1 cup dry jasmine rice
1-1/2 cups chicken stock
2 teaspoons lime zest
1 teaspoon ground cumin
1/4 cup finely chopped cilantro plus additional for garnish (optional)
2 tablespoons fresh lime juice
1/4 teaspoon salt
2 tablespoons crumbled Cotija or feta cheese
1. In large skillet, melt butter over medium heat. Add garlic; cook 2 minutes or until fragrant, stirring occasionally. Add rice; cook 4 minutes or until golden, stirring occasionally.
2. Stir in stock, 1 teaspoon lime zest and cumin; heat to a simmer. Cover and reduce heat to low; cook 15 minutes.
3. Fluff rice with fork. Stir in cilantro, lime juice, salt and remaining 1 teaspoon lime zest; serve sprinkled with cheese and cilantro, if desired. Makes about 3 cups.
