Grilled Everything-Spiced Stuffed Chicken

Grill: 15 minutes • Serves: 4

2 green onions, thinly sliced
1 cup thawed and squeezed dry frozen chopped spinach
1/2 cup Neufchâtel cheese, softened
1/4 teaspoon salt
4 boneless, skinless Miller® Poultry Chicken Breasts (about 6 ounces each)
2 tablespoons Pompean® Olive Oil
1/4 cup everything seasoning

1. Prepare outdoor grill for direct grilling over medium-high heat. In medium bowl, stir green onions, spinach, cheese and salt. Makes about 1 cup.

2. With sharp knife, cut each chicken breast horizontally in half, but do not cut all the way through, leaving about 1/4 inch uncut; open chicken breasts and lay flat. Rub both sides of chicken with oil and sprinkle with seasoning; leaving about 1/2-inch border, divide spinach mixture over bottom halves. Fold chicken breasts to enclose spinach mixture.

3. Place chicken on hot grill rack; cover and cook 15 minutes or until internal temperature of chicken and spinach mixture reaches 165°, turning once.
