Grilled Peach & Prosciutto Skewers

Grill: 6 minutes • Serves: 8
1/4 cup plus 2 tablespoons honey
1/4 cup balsamic vinegar
8 small peaches, halved, pitted and quartered
12 slices prosciutto, cut in half
1/2 (14-ounce) french baguette, cut crosswise into 24 (1/2-inch-thick) slices
Nonstick cooking spray
1/2 cup feta cheese
2 tablespoons chopped fresh basil
1.Soak skewers in water 20 minutes; prepare outdoor grill for direct grilling over medium heat. In small bowl, stir 1/4 cup honey and vinegar.
2.Alternately thread peaches and prosciutto onto skewers; brush both sides with vinegar mixture. Place skewers on hot grill rack; cover and cook 6 minutes or until grill marks appear, turning once. During last 2 minutes of cooking, spray baguette slices with cooking spray. Place baguette slices, sprayed side down, on hot grill rack; cover and cook 2 minutes or until grill marks appear. Makes 24 crostini.
3.Sprinkle skewers with cheese and drizzle with remaining 2 tablespoons honey; sprinkle with basil and serve with baguette.
