Heirloom Tomato-Dill Lobster Roll

Prep: 15 minutes
Broil: 2 minutes • Serves: 4

4 New England-style hot dog rolls
2 tablespoons fresh lemon juice
2 tablespoons Greek vinaigrette
2 tablespoons mayonnaise
2 tablespoons plain nonfat Greek yogurt
1 teaspoon chopped fresh dill plus small sprigs for garnish
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 large heirloom tomato, chopped
2 cups chopped claw & knuckle lobster meat

1. Preheat broiler to high. Place rolls on rimmed baking sheet; broil 2 minutes or until lightly toasted.

2. In large bowl, whisk lemon juice, vinaigrette, mayonnaise, yogurt, dill, salt and pepper; fold in tomato and lobster. Makes about 3 cups.

3. Fill rolls with lobster mixture; garnish with dill sprigs. Makes 4 lobster rolls.
