Holiday Breakfast Strudel

Grill: i minutes • Serves: 6

2/3 cup bacon and sausage crumbles
6 whole eggs – 5 (whisked in a bowl) 1 egg for egg wash
3/4 cup white cheddar cheese (shredded)
1/2 cup broccolini (chopped)
1 red bell pepper (diced)
2 teaspoons sea salt
1 teaspoon black pepper
2 tablespoons olive oil
1 puff pastry sheet

1. In a medium hot sauté pan cook the vegetables in half of the olive oil until bright in color and slightly softened. Remove from the pan and allow to cool down completely.

2. In the same pan bring back to a medium heat and add the eggs with the rest of the olive oil. cook and scramble until done. Remove from the pan and also allow to cool.

3. Bring the puff pastry to room temperature and unfold onto a cutting board. With a rolling pin gently roll the pastry out to form a rectangle.

4. Down the center of the pastry and in this order add the scrambled eggs, the sausage and bacon crumbles, the vegetables, and then the cheese on top.

5. Cut diagonal 1-1/2 inch strips upwards on both sides of the centered mixture and brush with egg wash.

6. Closest to you bring the strips up over the filling alternating back and forth until all are wrapped over each other.

7. Tuck in the ends and place a little egg wash on top of the strudel.

8. Bake in a 400 degree oven for about 20 minutes or until the strudel is nicely browned.

9. Remove from the oven, allow to cool slightly and then Enjoy!!
