Homestyle Slow Cooker Meatloaf

Prep: 20 minutes plus standing
Slow Cook: 5 hours 5 minutes • Serves: 8

Nonstick cooking spray
1/2 cup reduced sodium ketchup
3 tablespoons light brown sugar
2 tablespoons red wine vinegar
1 tablespoon hot sauce
2 large eggs
2 pounds 80% lean ground beef
2 cups Italian-style breadcrumbs
1-1/2 cups whole milk
1 cup finely chopped white onion
1/2 teaspoon fresh ground black pepper
Chopped fresh parsley for garnish (optional)

1. Line 5- to 6-quart slow cooker with aluminum foil so that foil extends about 2 inches over edges of slow cooker; spray with cooking spray. In small bowl, whisk ketchup, sugar, vinegar and hot sauce. Makes about 3/4 cup.

2. In large bowl, lightly whisk eggs; gently mix in beef, breadcrumbs, milk, onion and pepper. With wet hands, gently form beef mixture into 5 x 9-inch loaf; place in slow cooker. Reserve and refrigerate 1/2 the ketchup mixture; brush meatloaf with remaining ketchup mixture. Cover slow cooker and cook on low 5 hours or until internal temperature reaches 160°.

3. Place oven rack 6 to 7 inches from broiler; preheat broiler to high. Using overhanging sides of foil, transfer meatloaf on foil to rimmed baking pan; brush with reserved ketchup mixture. Broil meatloaf 5 minutes or until browned; let stand 5 minutes before slicing. Cut into 8 slices; garnish with parsley, if desired.
