Korean Barbeque Ground Beef Rice Bowl

Cook: 25 minutes • Serves: 4

1-1/2 cups short-grain white rice
1 pound 93% lean ground beef
1/2 cup Korean barbeque sauce plus additional for serving (optional)
1/2 English cucumber, thinly sliced
1 cup kimchi
1 cup matchstick carrots
1/2 cup thinly sliced red and/or green chile peppers
4 green onions, thinly sliced
1 tablespoon Morton & Bassett® Sesame Seeds

1.Prepare rice as label directs.

2.In large nonstick skillet, cook beef over medium-high heat 8 minutes or until browned, breaking up beef with side of spoon. Stir in barbeque sauce; cook 2 minutes or until slightly thickened.

3.In large bowl, toss cucumber, kimchi, carrots and peppers. Divide rice into 4 bowls; top with beef mixture and vegetable-kimchi mixture. Sprinkle with green onions and sesame seeds; drizzle with additional barbeque sauce, if desired.
