Mediterranean Tortellini Pasta Salad

Prep: 15 minutes plus cooling
Cook: 8 minutes • Serves: 8

2 packages (9 ounces each) refrigerated three cheese tortellini
1/2 (14.5-ounce) can whole peeled tomatoes, drained and chopped
1/2 small red onion, thinly sliced
1 cup packed baby spinach
1/2 cup Italian dressing
1/3 cup drained and chopped roasted red peppers
1/3 cup crumbled reduced fat feta cheese

1. Prepare tortellini as label directs; drain, rinse with cold water and cool completely.

2. In large bowl, toss tomatoes, onion, spinach, dressing, peppers and tortellini; fold in cheese. Makes about 7 cups.
