Mexican Street Corn Elote

Prep: 20 minutes plus soaking
Grill: 8 minutes • Serves: 8

8 wooden skewers or sticks
3 garlic cloves, minced
3 tablespoons mayonnaise
2 tablespoons sour cream
1-1/2 teaspoons fresh lime juice
3/4 teaspoon hot sauce
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh cilantro
1/4 teaspoon chili powder
4 large ears fresh corn, silks and husks removed, halved crosswise
1 tablespoon olive oil

1.Prepare outdoor grill for direct grilling over medium-high heat; soak skewers in water 20 minutes.

2.In wide, shallow dish, stir garlic, mayonnaise, sour cream, lime juice and hot sauce. In separate wide, shallow dish, stir cheese, cilantro and chili powder.

3.Insert skewers halfway into 1 end of each piece of corn; brush corn with oil. Place on hot grill rack; cover and cook 8 minutes or until grill marks appear, turning once. Carefully roll hot corn in mayonnaise mixture, then in cheese mixture to coat. Makes 8 street corn.
