Oven Grilled Cheese 3 Ways

Oven Grilled Cheese with Apples

Prep: 10 minutes
Bake: 6 minutes • Serves: 4

8 slices cinnamon raisin or white bread
1/4cup unsalted butter, softened
4 tablespoons jam or preserves such as apricot or orange
1 package (8 ounces) Brie or Cheddar cheese, sliced
2 apples or pears, halved, cored and thinly sliced
1/2cup powdered sugar (optional)
2tablespoons milk or water (optional)

1.Place rimmed baking pan on middle rack in oven; preheat oven to 450°. Spread 1 side of bread slices with butter; place 4 slices, butter side down, on second rimmed baking pan. Top with jam, half the cheese, apples, and remaining half the cheese and 4 bread slices, butter side up.

2.Carefully remove hot baking pan from oven and press on top of sandwiches; carefully place sandwiches between pans back on middle oven rack. Bake sandwiches 6 minutes or until cheese is melted and bread is golden brown.

3.In small bowl, whisk powdered sugar and milk. Serve sandwiches drizzled with powdered sugar mixture, if desired.

Oven Grilled Cheese with Bacon

Prep: 15 minutes
Bake: 6 minutes • Serves: 4

4 slices bacon or turkey bacon
1/3cup mayonnaise
1 tablespoon sriracha chili sauce or chili paste
8 slices white or Italian bread
1-3/4cups shredded Colby Jack or mozzarella cheese
2 Roma tomatoes, cut into ¼-inch-thick slices (optional)
1 large ripe avocado, peeled, pitted and sliced (optional)

1. Preheat oven to 375°; line rimmed baking pan with aluminum foil. Arrange bacon on prepared pan; bake 12 minutes or until crisp. Transfer bacon to cutting board; cut crosswise in half. Remove foil from pan; wipe pan clean with paper towel, if necessary. Place pan on middle oven rack; preheat to 450°.

2.In small bowl, stir mayonnaise and sriracha. Makes about 6 tablespoons.

3.Spread 1 side of bread slices with mayonnaise mixture; place 4 slices, mayonnaise side down, on second rimmed baking pan. Top with 1/2 the cheese, bacon, tomatoes, avocado, remaining cheese and remaining 4 bread slices, mayonnaise side up.

Prep: 15 minutes
Bake: 6 minutes • Serves: 4

12 ounces canned tuna, drained
1/2cup mayonnaise
1/4cup finely chopped pickles or pickled jalapeño peppers
1/2teaspoon Old Bay® seasoning
8 slices white or pumpernickel bread
8 slices American or provolone cheese

1. Place rimmed baking pan on middle rack in oven; preheat oven to 450°. In medium bowl, flake tuna with fork; fold in 3 tablespoons mayonnaise, pickles and seasoning. Makes about 1-1/2 cups.

2.Spread 1 side of bread slices with remaining 5 tablespoons mayonnaise; place 4 slices, mayonnaise side down, on second rimmed baking pan. Top with half the cheese, tuna mixture, and remaining half the cheese and 4 bread slices, mayonnaise side up.

3.Carefully remove hot baking pan from oven and press on top of sandwiches; carefully place sandwiches between pans back on middle oven rack. Bake sandwiches 6 minutes or until cheese is melted and bread is golden brown.
