Oysters with Bourbon-Chipotle Butter

Broil: 2 minutes • Serves: 8

Bourbon-Chipotle Butter

1garlic clove, minced
1/2cup Our Family® Unsalted Butter (1 stick), softened
3tablespoons bourbon whiskey
2tablespoons chopped chipotle chile peppers in adobo sauce
2tablespoons chopped fresh chives
1teaspoon fresh lemon juice
1/2teaspoon kosher salt


24large Fresh Chesapeake Bay Shucked Oysters
Lemon wedges for garnish

1. Prepare Bourbon-Chipotle Butter: Preheat broiler with oven rack about 6 inches from source of heat. In mixing bowl, stir together all ingredients. Cover and refrigerate until ready to use. Makes: about 1 cup.

2. If not already loosened from the shells, slide an oyster knife under the oysters in the bottom shells to detach them from the shell, leaving them in the bottom shells. On large rimmed baking pan, place oysters in a single layer.

3. Spoon 1 teaspoon Bourbon-Chipotle Butter over each oyster. Broil oysters in their shell for 2 to 3 minutes or just until the oysters are heated through. Serve with lemon wedges.
