Peach Cobbler

Bake: 20 minutes • Serves: 8

2 jars (48 oz) Busch’s old fashioned peaches
1 juiced lemon
1 cup white sugar
1 tsp plus a pinch salt
6 tbsp melted Calder’s Sweet Unsalted Butter
1-1/2 cups Prairie Farms Milk
1 tsp pure vanilla extract
1-1/2 cup all purpose flour
1 tbsp baking powder
1/2 tsp cinnamon
2 tbsp Pure Demerara Large Crystal Sugar

1. Open the jars of peaches and drain off the liquid. Slice each peach in half and place in mixing bowl.

2. Add the ground cinnamon, melted butter, juice of 1 fresh lemon, and a pinch of salt to the peaches and gently combine together in a mixing bowl.

3. In another mixing bowl add the flour, sugar, salt, baking powder whisk together with the milk to make a smooth batter. Spray a large casserole dish with non-stick spray and pour the batter into the dish dispersing evenly.

4. Spoon the peach mixture evenly over the batter adding all of the liquid that’s in the bowl as well.

5. Sprinkle the large sugar crystals evenly over the entire cobbler and place in the oven.

6. Bake at 350 degrees for 20 – 25 minutes until golden brown on top. Remove from oven once cooked and allow to rest until the cobbler has cooled to room temperature.

7. Serve a nice portion on a plate or bowl with either vanilla ice cream or whipped cream.
