Pumpkin Protein Bites

Prep: 15 minutes plus chilling • Serves: 16

1-1/2 cups pitted dates
1 cup old-fashioned rolled oats
1/2 cup almond butter
1/2 cup canned 100% pure pumpkin
1/4 cup mini chocolate chips
1 tablespoon honey
1/2 teaspoon ground cinnamon

1. Line rimmed baking pan with parchment paper. In food processor, pulse dates and oats on high until small crumbs form.

2. In large bowl, stir almond butter, pumpkin, chocolate chips, honey, cinnamon and date mixture; roll into 1-inch balls and place on prepared pan. Refrigerate 1 hour. Makes about 16 bites.

Chef Tip:
Shape the bites to resemble pumpkins by making small indentations on the top and bottom of each bite, then add a small mint leaf on top for the pumpkin’s stem.
