Roasted Honey-Orange Carrots

Roast: 30 minutes • Serves: 6

2pounds carrots, peeled and cut diagonally into 2-inch pieces
1 tablespoon Colavita® Extra Virgin Olive Oil
1/4 cup honey
3 tablespoons fresh orange juice
1/2 teaspoon orange zest
1/4 teaspoon fine sea salt

1.Preheat oven to 425°. On rimmed baking pan, toss carrots and oil; roast 30 minutes or until tender, stirring once.

2.In small saucepan, heat honey, orange juice and zest to a boil over medium heat; cook 5 minutes or until thickened, whisking frequently. Makes about 1/4 cup.

3.Serve carrots drizzled with honey mixture sprinkled with salt.
