Secret Sauce Meatloaf Cups

Prep: 15 minutes plus standing
Bake: 20 minutes • Serves: 6

Nonstick cooking spray
2 large eggs
2 pounds 80% lean ground beef
1/2 (6-ounce) box savory herbs stuffing mix
1 cup unsweetened applesauce
1 cup barbeque sauce
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Chopped fresh parsley for garnish (optional)

1. Preheat oven to 375°; spray 12-cup standard muffin pan with cooking spray. In large bowl, lightly whisk eggs; gently mix in beef, stuffing mix, applesauce, 1/2 cup barbeque sauce, parsley, basil, garlic powder and onion powder. Divide beef mixture into prepared cups; top with remaining 1/2 cup barbeque sauce.

2. Bake meatloaf cups 20 minutes or until internal temperature reaches 160°; let stand 10 minutes. Makes 12 meatloaf cups.

3. Serve meatloaf cups garnished with parsley, if desired.
