Smoked Baby Back Ribs with Honey-Orange BBQ Glaze

Prep: 25 minutes plus chilling and standing
Grill: 1 hour • Serves: 8

Ribs

8 pounds baby back pork ribs
1/3 cup favorite pork rub
4 cups favorite wood chips

Honey-Orange BBQ Glaze

1/2 cup honey
1/3 cup favorite barbeque sauce
1/3 cup fresh orange juice

1.Prepare Ribs: Turn each rack of ribs bone side up; with sharp knife, carefully lift up edge of thin, papery membrane from a corner. Work fingers between membrane and ribs to loosen. Grab membrane with paper towel; pull across to remove. Cut each rack of ribs crosswise in half. Evenly rub all sides of ribs with pork rub; cover and refrigerate at least 1 hour or up to overnight.

2.In large bowl, cover wood chips with water; soak as label directs.

3.Meanwhile, prepare Honey-Orange BBQ Glaze: In small saucepot, heat all ingredients over low heat 5 minutes or until heated through, stirring occasionally.

4.Prepare outdoor grill for indirect grilling over medium heat. Drain wood chips; place 2 cups chips in grill (in foil packet or pie tin for gas or directly on coals for charcoal).

5.Place ribs on hot grill rack over unlit side of grill; cover and cook 1 hour or until meat easily pulls away from bone, turning every 20 minutes, adding remaining chips halfway through cooking and brushing with glaze during last 20 minutes of cooking. Transfer ribs to cutting board and loosely cover with aluminum foil; let stand 10 minutes. Serve ribs with any remaining glaze.
