Strawberry-Balsamic Crostini

1 tablespoon honey
2 cups chopped strawberries
2 tablespoons chopped fresh mint
8 (1/2-inch-thick) slices ciabatta bread
3/4 cup ricotta cheese
1/4 teaspoon salt
1/8teaspoon black pepper
1.Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, whisk vinegar and honey; stir in strawberries and mint. Let strawberry mixture stand 15 minutes, stirring occasionally.
2.Place ciabatta on hot grill rack; cover and cook 3 minutes or until grill marks appear, turning once. Let ciabatta stand 5 minutes.
3.Spread cheese on ciabatta; sprinkle with salt and pepper and top with strawberry mixture. Makes 8 crostini.
