1 container (6 ounces) low-fat strawberry yogurt
1 teaspoon vanilla extract
1-1/2 cups hulled, halved and frozen fresh strawberries (about 15 strawberries)
Mint leaves for garnish (optional)
1. In blender, blend soymilk, yogurt and vanilla 5 seconds. Add strawberries and blend 20 seconds or until smooth.
2. Pour into glasses and garnish with mint leaves, if desired.
