Turkey-Avocado Pinwheels

Prep: 15 minutes • Serves: 4

1/2 avocado, peeled and pitted
1 tablespoon fresh lime juice
1/4 teaspoon garlic powder
8 slices low sodium deli turkey
4 slices ultra thin provolone cheese
1/2 cup radish sprouts
1/3 cup drained sliced roasted red peppers
20 mini skewers

1. In small bowl, mash avocado, lime juice and garlic powder with fork. Makes about 1/3 cup.

2. On work surface, stack 2 slices turkey; top with 1 slice cheese. Spread cheese with 1 heaping tablespoon avocado mixture, and top with sprouts and peppers; roll up tightly to enclose filling. Slice crosswise into 5 (1-inch) pinwheels; secure each pinwheel with mini skewer. Repeat with remaining turkey, cheese, avocado mixture, sprouts and peppers to create 15 more pinwheels. Makes 20 pinwheels.
