Tuscan Pizza Calzones

2pizza dough balls (8 ounces each), thawed if frozen
2tablespoonsColavita® extra virgin olive oil
1green bell pepper, sliced 1/4-inch-wide strips
1red bell pepper, sliced into 1/4-inch-wide strips
1/2small yellow onion, sliced
2tablespoons chopped fresh basil
2tablespoons chopped fresh parsley, plus additional for garnish
1teaspoon Morton & Bassett Italian seasoning
Kosher salt and Morton & Bassett coarse ground black pepper, to taste
All-purpose flour for dusting
1/2cup DeLallo Italian style pizza sauce, divided, plus additional for dipping
1cup shredded mozzarella cheese, divided
3ounces pepperoni slices, divided
Nonstick cooking spray
DeLallo grated Parmesan cheese for garnish (optional)

1. Preheat oven to 400°. Place pizza dough balls on counter to warm up and soften. Meanwhile, heat oil in medium skillet over medium-high heat. Add peppers and onion, and cook 3 to 4 minutes, stirring frequently. Stir in basil, parsley, Italian seasoning, salt and pepper. Remove from heat and let cool.

2. Roll out pizza dough balls into 10-inch circle, dusting with flour as necessary to prevent sticking. Spread 1/4 cup pizza sauce onto center of each rolled out dough, leaving a 1-inch border. Sprinkle 1/4 cup cheese over pizza sauce. Place about 10 slices of pepperoni over cheese, and top with 1/2 of the pepper-onion mixture. Sprinkle 1/4 cup cheese over pepper-onion mixture, and place about 10 more slices of pepperoni over cheese. Lightly wet entire border of pizza dough with water and fold over to form a half moon. Crimp edges of pizza dough with fork.

3. Spray rimmed baking pan with nonstick cooking spray. Place calzones on prepared baking sheet and lightly brush outside with olive oil. Bake calzones 30 to 40 minutes or until outsides are lightly browned. Sprinkle calzones with parsley and Parmesan cheese, if desired. Cool 10 minutes. Cut each calzone in half and serve with additional pizza sauce for dipping.
