Veggie-Waffle Fry Nachos

1 package (20 ounces) seasoned waffle-cut sweet potato fries
1/4 (16-ounce) package frozen pepper and onion stir-fry, thawed and coarsely chopped
1 cup shredded reduced fat Monterey Jack cheese
3/4 cup canned seasoned black beans, drained
1/4 cup thawed frozen corn
1/2 large avocado, peeled, pitted and chopped
1/4 cup salsa
3 tablespoons plain nonfat Greek yogurt
2 tablespoons chopped fresh cilantro
1/4 (16-ounce) package frozen pepper and onion stir-fry, thawed and coarsely chopped

3/4 cup canned seasoned black beans, drained
1/4 cup thawed frozen corn
1/2 large avocado, peeled, pitted and chopped
1/4 cup salsa
3 tablespoons plain nonfat Greek yogurt
2 tablespoons chopped fresh cilantro
1. Preheat oven to 425°; prepare fries as label directs. Push fries closer together on pan.
2. Sprinkle fries with pepper and onion stir-fry, cheese, beans and corn; bake 10 minutes or until cheese melts. Makes about 8 cups.
3. Serve nachos topped with avocado, salsa, yogurt and cilantro.
