Smoky Gorgonzola-Bacon Burgers

Grill: 12 minues • Serves: 4

4 slices thick-cut smoked bacon
1-1/4 pounds 80% lean ground chuck
1/2 teaspoon fresh ground black pepper
1/2 teaspoon smoked paprika
1/2 cup crumbled Gorgonzola cheese
4 favorite hamburger buns
1/4 cup garlic aioli
4 (1/4-inch-thick) slices red onion
4 (1/4-inch-thick) slices tomato
1 cup baby spinach

1.Prepare outdoor grill for direct grilling over medium heat. In large skillet, cook bacon over medium heat 12 minutes or until crisp, turning occasionally; transfer to paper towel-lined plate. Cool; cut slices crosswise in half.

2.In large bowl, gently mix ground chuck, pepper and paprika (do not overmix); form into 4 (½-inch-thick) patties and make shallow indentation in center of each patty. Place patties on hot grill rack; cover and cook 12 minutes or until internal temperature reaches 160°, turning once. About 2 minutes before burgers are done, top burgers with cheese and place buns, cut side down, on hot grill rack; cook 2 minutes or until buns are toasted.

3.Spread top halves of buns with aioli; top bottom halves of buns with burgers, bacon, onion, tomato, spinach and top halves of buns.
