Blueberry-Lemon Zing

Prep: 10 minutes • Serves: 4

3 1/2cups coconut water
1cup fresh blueberries
1/2cup diced cucumber
1/2cup fresh lemon juice
1/2cup honey
1tablespoon plus 1 teaspoon lemon zest
1/2teaspoon finely grated fresh ginger
Fresh blueberries, lemon zest twists and thin cucumber slices for garnish (optional)

1. Muddle 1/2 cup coconut water, blueberries, cucumber, lemon juice, honey, lemon zest and ginger in a cocktail shaker; add remaining 3 cups coconut water and ice cubes. Shake vigorously; strain into 4 rocks glasses filled with ice cubes. Garnish with blueberries, lemon zest twists and cucumber slices, if desired.
