Grilled Mediterranean Meatballs with Zucchini Noodles & Garlic Hummus

Prep: 15 minutes plus soaking
Grill: 8 minutes • Serves: 4

4 (10-inch) wooden skewers
2 medium Roma tomatoes, chopped
1 large zucchini, spiralized (about 2-1/2 cups)
1/2 cup crumbled feta cheese
6 tablespoons prepared basil pesto
1 pound Laura’s Lean 92% Lean Ground Beef
1/2 cup roasted garlic hummus
2 tablespoons chopped fresh parsley plus additional for garnish (optional)
1 tablespoon shawarma seasoning
Nonstick cooking spray
Lemon wedges for garnish (optional)

1. Prepare outdoor grill for direct grilling over medium heat; soak skewers in water 20 minutes.

2. In large bowl, toss tomatoes, zucchini, cheese and pesto; cover and refrigerate. Makes about 4 cups.

3. In large bowl, gently mix beef, 1/4 cup hummus, parsley and seasoning; form beef mixture into 16 (1-inch) meatballs. Thread 4 meatballs onto each skewer and place on rimmed baking pan; spray with cooking spray. Place skewers on hot grill rack; cover and cook 8 minutes or until internal temperature reaches 165°, turning once. Makes 4 skewers.

4. Serve skewers over zucchini noodle mixture topped with remaining 1/4 cup hummus garnished with parsley and/or lemon wedges, if desired.

Chef Tip:
Use a vegetable spiralizer to spiralize the zucchini.
