Olé Philly Cheesesteak Sliders

Bake: 12 minutes • Serves: 12

4 teaspoons vegetable oil
12 mini sweet peppers, halved lengthwise and sliced
2 medium jalapeño peppers, sliced
1 small white onion, halved and sliced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1-1/4 pounds deli sliced roast beef, chopped
2 packages (12 rolls each) favorite Hawaiian rolls, split lengthwise
1 cup salsa con queso
3 tablespoons unsalted butter, softened

1.Preheat oven to 350°. Line rimmed baking pan with aluminum foil.

2.In large skillet, heat 2 teaspoons oil over medium-high heat; add peppers, onion, salt and black pepper. Cook 10 minutes or until tender, stirring occasionally; transfer to bowl.

3.In same skillet, heat remaining 2 teaspoons oil over medium-high heat. Add beef and cook 10 minutes, stirring frequently; drain any liquid from skillet.

4.Place bottom rolls on prepared pan; layer with beef and pepper-onion mixture. Pour queso over sweet pepper-onion mixture; top with top rolls. Dot tops of sliders with butter; loosely cover with aluminum foil.

5.Bake sliders 10 minutes, rotating pan halfway through cooking; uncover and bake 2 minutes longer or until tops of sliders are lightly browned. Let stand 5 minutes; cut into sliders. Makes 24 sliders.
