Grilled Prosciutto & Tomato Ricotta Toast

Grill: 10 minutes • Serves: 4
1/2 (10-ounce) package cherry tomatoes, halved
1/2 cup packed baby arugula
4 (3/4-inch-thick) slices ciabatta bread
Nonstick cooking spray
1/2 cup ricotta cheese
Cracked black pepper for garnish (optional)
1. In medium bowl, toss prosciutto, tomatoes and arugula. Makes about 2 cups.
2. Prepare outdoor grill for direct grilling over medium-high heat. Spray both sides of bread with cooking spray. Place bread on hot grill rack; cover and cook 3 minutes or until grill marks appear, turning once. Turn off 1 side of grill.
3. Spread toasts with cheese; top with prosciutto mixture. Place toasts on unlit side of grill; cover and cook 7 minutes or until heated through and top is lightly browned. Makes 4 toasts.
4. Serve toasts garnished with pepper, if desired.
