Rainbow Avocado Toast
Prep: 15 minutes • Serves: 4
2teaspoons fresh lemon juice
1/8teaspoon black pepper
4slices very thin 100% whole wheat bread
1/4cup shredded carrots
4cherry tomatoes, quartered
1/4cup drained and rinsed reduced sodium black beans
1/4cup finely chopped broccoli
1/4cup finely chopped yellow bell pepper
2teaspoons Colavita® Extra Virgin Olive Oil
1. In small bowl, mash avocado, lemon juice and black pepper with fork. Makes about 1/2 cup.
2. Toast bread; spread with avocado mixture. Arrange carrots, tomatoes, beans, broccoli and bell pepper in rows over avocado mixture; drizzle with oil.
