Cranberry-Orange Oatmeal Cookies

3 cups old-fashioned oats
1 cup white whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup Challenge® Unsalted Butter (1 stick), softened
3/4 cup packed Domino® Light Brown Sugar
2 large Pete and Gerry’s® Eggs
1/4 cup fresh orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
3/4 cup dried cranberries

1.Preheat oven to 350°. In medium bowl, stir oats, flour, baking soda, cinnamon, ginger and salt.

2.In large bowl, with mixer on medium speed, beat butter and brown sugar until creamy, scraping down sides of bowl; beat in eggs, orange juice and zest, and vanilla extract. Reduce speed to low; gradually beat in oat mixture. Fold in cranberries.

3.In 3 batches, using 2 small spoons, drop rounded tablespoons of cookie dough onto ungreased cookie sheet; bake 8 minutes or until golden brown. Cool cookies 1 minute on cookie sheet; transfer to wire rack to cool completely. Makes about 36 cookies.
