1/4 small white onion, chopped
1/2 (8-ounce) package sliced white mushrooms
1 pound 85% lean ground beef
3 garlic cloves, minced

1.Prepare outdoor grill for direct grilling over medium-high heat. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.
2.In same skillet with drippings, cook pepper and onion 3 minutes, stirring occasionally. Add mushrooms; cook 4 minutes or until vegetables are tender, stirring occasionally.
3.In large bowl, gently mix beef, garlic, seasoning and salt until combined (do not overmix); form into 4 (1/2-inch-thick) patties and make shallow indentation in center of each.
4.Spray patties with cooking spray and place on hot grill rack; cover and cook 10 minutes, turning once. During last 2 minutes of cooking, top patties with sauce, cheese, pepperoni, bacon and pepper mixture, and place buns, cut side down, on hot grill rack; cover and cook 2 minutes or until internal temperature of burgers reaches 160°, cheese is melted and buns are lightly toasted, turning once. Makes 4 burgers.
