Blueberry-Peach Sparkler

Cook: 10 minutes • Serves: 4
2 tablespoons clover honey
1 teaspoon lemon zest
Ice
2 peaches, pitted and sliced
3 cups peach sparkling water
1. In medium saucepan, cook blueberries, honey, lemon zest and 1/4 cup water over medium-low heat 10 minutes or until berries have broken down, stirring occasionally; strain through fine-mesh strainer into small bowl, pressing gently with back of spoon to extract syrup. Refrigerate 40 minutes or until chilled. Makes about 1/2 cup.
2. To serve, fill 4 (12-ounce) glasses halfway with ice. Add 2 tablespoons blueberry syrup, 1 peach slice and 3 blueberries to each glass; top with sparkling water, gently stir and garnish with peach slices.
