Cheeseburger-Stuffed Portobello Mushrooms

3 slices American cheese, chopped
4 teaspoons hamburger seasoning
6 large portobello mushrooms, stems removed
Nonstick cooking spray
6 thin slices red onion
1 cup shredded iceberg lettuce
1/4 cup dill pickle chips
3 tablespoons ketchup
3 tablespoons mayonnaise
3 tablespoons yellow mustard
1. Prepare outdoor grill for indirect grilling over medium-high heat. In large bowl, gently mix beef, cheese and seasoning until just combined; do not overmix. Spray both sides of mushrooms with cooking spray; fill with beef mixture.
2. Place mushrooms, beef side up, on hot grill rack over unlit side of grill; cover and cook 30 minutes. Transfer mushrooms to lit side of grill; cover and cook 5 minutes or until internal temperature of filling reaches 160°. Serve mushrooms topped with onion and lettuce along with pickle chips, ketchup, mayonnaise and mustard.
