Fresh Strawberry Lemonade
Prep: 25 minutes plus cooling • Serves: 8
1/3 cup honey
3/4 cup fresh lemon juice plus lemon slices for garnish (optional)
1. In medium saucepan, heat strawberries, honey and 1 cup water to a boil over medium-high heat; reduce heat to medium and simmer 15 minutes, stirring occasionally. Remove from heat and cool.
2. To blender, add cooled strawberry mixture; blend thoroughly until smooth.
3. In large pitcher, stir strawberry purée, 3 cups cold water and lemon juice. Makes about 6 cups.
4. Serve lemonade over ice garnished with strawberries and/or lemon slices, if desired.
