Sweet Potato Noodle Nests

1 container (10 ounces) sweet potato noodles
2 tablespoons unsalted butter, melted
1 tablespoon maple syrup
2 teaspoons pumpkin pie spice
1/4 cup aquafaba (liquid from 15.5-ounce can low sodium chickpeas)
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1. Preheat oven to 375°. Spray rimmed baking pan with cooking spray.
2. In medium bowl, toss noodles, butter, syrup and pumpkin pie spice; form into 6 “nests” on prepared pan, tucking in ends to prevent burning. Bake noodles 20 minutes or until tender and edges are golden brown.
3. Preheat broiler to high. In medium bowl, beat aquafaba, sugar, vanilla extract and cream of tartar with mixer on high speed 5 minutes or until stiff peaks form. Top nests with aquafaba mixture; broil 1 minute or until golden brown.
